Chilli Pepper Cheese Bites (desi -version)

Chilli Pepper Cheese Bites is my favorite party snack and as far as the Desis I know they would never say NO to these melting cheese bites especially if it has Chilli in it :)..! Well, it's my family's favorite and so is mine.

My brother in the UK got me hooked on it from Burger King, and so I have been wanting to mitigate making it at home. I had few failed attempts but finally, I managed to get my hands on it and was successful and so here I am sharing my version with you. Please do try it and taste it for yourself. This recipe is really a quicker version to get the same and similar taste. So try it out and let me know. 

Trust me it will be your next favorite party snack. You can also half fry them first and freeze them after. If you have Air Fryer - you can then use the frozen ones to air fry them on 375f for about 8 to 10 minutes.  


Yield - 12 to 14 bites

INGREDIENTS:
Grated Cheddar cheese or American cheese (processed) – 85 to 90 grams
Jalapenos - 1 to 2 finely chopped (ensure to remove the seeds)
Corn Flour – 3 tbsp
Black Pepper powder – 1 teaspoon
Finely Chopped Cilantro Leaves – 2 1/2 tbsp
Salt to taste
Oil for deep frying
Bread crumbs as needed
Plain flour as needed
Eggs - 2 to 3 - Beat them and season it with red chili powder and some black pepper powder - and pinch salt
Paprika - 1 teaspoon
Mixed herbs (optional) - 1/2 teaspoon

METHOD:
  1. I used the processed cheddar cheese but you can use the American processed cheese as well. Take a cheese cube and grate it or break into small pieces. When it comes to room temperature cheese would be soft enough to get broken into small pieces and get mashed. Mix cornflour, salt, pepper powder, chilies, and cilantro leaves, paprika powders and knead well to form a chapati kind of dough. If needed add little milk to get the required consistency. The dough should not be dry and crackled. Divide the chili cheese dough into equal balls and press gently with your finger such that they form little disc-like shapes. Chill it in the refrigerator for 3 hours.
  2. Now take two shallow plates. Add the egg mixture in one and plain flour in another. Take one ball at a time and dip in the egg mixture. Then quickly take it out and roll it on the plain flour. Again, coat the ball in the egg mixture and then finally roll it on bread crumbs. This kind of different layers of coating helps the bites to form a crispy outer layer. Chill in the refrigerator for 30-40 minutes
  3. Repeat the same for all the balls.
  4. Heat enough oil for deep frying on medium to high flame and fry till golden brown on both sides.
  5. Drain the excess oil on tissue paper and serve hot with any chutneys or dips. I prefer it with Schezwan Chutney and Ranch/Mayonnaise (Mix 2 tablespoon of chutney with 1 tablespoon Ranch or Mayo). If you would like to make it without eggs:->

Make a batter from plain flour and rice flour (not too thick and not too thin) and use it instead of the egg mixture.
