Curry Leaves Chutney (Dry - Gujju version)

Curry leaves Chutney is our favorite chutney to have with all our Gujarati sabjis and with Khakra or Theplas. Gujaratis usually called it Limbri ni chutney!!! It is super easy to make as well as it has a lot of health benefits:

  • Heals wounds, burns and skin eruptions




Ingredients
Curry Leaves (Baby ones/small ones- coarsely blended) - 1 cup
Sesame seeds - 1 tablespoon
Coarse blended raw unsalted peanuts - 1 tablespoon
Garlic Paste - 1/2 teaspoon
salt to taste
Oil - 1 1/2 teaspoon
Mustard seeds (Rai) - 1/2 teaspoon
Hing (Asafetida) - pinch
Green chili paste - to your taste
Turmeric powder - pinch
Sugar - pinch
Coriander powder - 1/2 teaspoon
Amchur powder - 1/2 teaspoon

Method/Instructions
1. Take a blender and blend the curry leaves and peanuts separately to prepare the mixture for the chutney. Ensure it is coarsely blended.
2. Take a small wide nonstick pan and on medium heat, add oil, and then mustard seeds. Once the seeds start to crackle add hing, sesame seeds, peanuts, and curry leaves and saute for good 5 minutes on low flame. 
3. Once the mixture starts to dry up a bit, add sugar, amchur powder, turmeric, garlic paste, green chili paste, and taste the mixture and add anything that you feel short off.
4. Saute for another 5 minutes on low flame. Ensure to not close the lid till the chutney cools off. The chutney will go dark otherwise. 
5. Enjoy with any Sabjis or Thepla :) 



Notes:
If you do not have that many curry leaves, you can just use what you have and add ingredients accordingly. Half the quantity or add them to your taste :)
