Taco Bell style Mexican Pizza: Fried / Air -fried

Most of the Desi's I know loves Mexican Pizza from Taco Bell.

I love Taco Bell Mexican pizza since the very first day I must have tried when I was young, so in the spirit of continuing my tradition of attempting to duplicate my restaurant favorites, I had to come up with my own Taco Bell Mexican Pizza Recipe.


This recipe is a flavorful combination of seasoned refried beans, enchilada sauce, flour tortillas, and Roma tomatoes. You can add Green Onions or Olives or any toppings you like or keep it traditional with just Roma tomatoes as the only topping!!!. 
Ingredients
  • 8 - 10 flour tortillas
  • 1 can of refried beans
  • 2 Roma tomatoes, diced
  • 1/2 cup mozzarella cheese or Pepper Jack (optional)
  • 1/2 cup cheddar cheese
  • 1/2 cup Mexican blend
  • 2 tablespoon taco seasoning

  • 1 tablespoon Garlic powder or Garlic paste or to taste
  • ¼ cup of water

Optional Toppings

  • Sour cream
  • Cilantro
  • Taco sauce or Taco bell Sauce or Tomato Salsa
  • Olives
  • Green Onions 
  • onions finely chopped
  • Green chilies or Jalapeno finely chopped
Notes:
  • Aztec brand tortilla works best for this recipe or you can use Chi-Chi’s tortilla if you can’t find Aztec. 
  • The taco bell sauce bottle is sold at Walmart and some Indian grocery stores too. 
  • If you can’t find taco bell sauce, Trader Joe’s has taco sauce that tastes equally delicious.
  • You can also use the enchilada sauce ensuring its made to perfection. It has to have a Tangy flavor. Watch my video https://youtu.be/OZ2D_YlQJ1w. Adjust and add more lemon juice or Amchur powder in the end to get the tangy smoky flavor. 

Instructions/Method:
  1. Ensure to poke small slits on all the tortillas with a fork or knife, so they don’t puff while shallow frying them. Fry them until they are golden brown.
  2. If using Air Fryer - set the temperature at 350 degrees and preheat for 5 minutes and then Air fry them for 3-4 minutes or until they are crispy. Air fry one tortilla at a time and spread some oil (optional) on both sides making sure to put the tortilla underneath the grill so it doesn’t jump around.
  3. In a pan or pot, heat about 1 to 2 teaspoon of oil, add the refried beans, water, garlic powder/paste, and taco seasoning. Mix everything well then set it aside. Taste the mixture and add salt if needed. 
  4. Mix all the cheeses before you start preparing the pizzas. 
  5. Take one Tortilla, spread the refried beans, top it with some cheese. Put another fried tortilla on top of it, spread the enchilada sauce on it or Taco Bell sauce or Taco sauce or Salsa and top it with more cheese and add the toppings of your choice or just chopped Roma Tomatoes. I always prefer to add some readymade salsa on the top layer with the taco sauce or enchilada sauce but it's optional if you do not want to use both. 
  6. Put the pizza in the oven and toast for 2-3 minutes or until the cheese has melted. You can also Air Fry them on the highest temp for 2 to 3 minutes. Ensure its preheated for 5 minutes prior. You can also just Microwave it for 30 to 60 seconds and that works too.  Top it with cilantro at the end if you would like. Do this until all the pizzas are made.
  7. Cut and enjoy your delicious homemade Mexican Pizzas :)
