Every Gujaratis surely would have eaten some kind of Chevdos while growing up with their morning or afternoon tea or coffee. Cereal is not just best consumed with milk but great when spices are added to it. It makes a healthier and yummiest snack eaten whenever your family is hungry.
You can control the kind of cereal you use such as gluten-free or any others you may prefer. Add the spices listed below and trust me you would fall in love with it. I always use the Chevdo to make instant Bhel on days when I crave for chaat or looking for a quick yummiest snack or lunch. I add finely chopped Onions, Tomatoes, Cucumber, Raw mango, Cilantro, and Lemon. Then, I would add Tomato ketchup and hot sauce if I don't have any chutneys handy to give it a sweet, tangy, and spicy flavor to Bhel.
Ingredients:
Cereals Mix:
Corn Chex Breakfast Cereal - 12oz - General Mills or any brand your choice
Rice Krispies Breakfast Cereal - 12oz - Kellogg's or any brand your choice
Kellogg's Corn Flakes, Breakfast Cereal, Original, 18 Oz or any brand your choice
Must-Have:
Piknik Shoestring Potatoes, Original - 9 Oz
Plain Sev - 4 cups
Roasted Sesame seeds - 4 tablespoons
To Fry:
Oil - 1 cup
Whole Raw Skinned Peanuts - 1 cup
Cashews (Halves) - 1/2 cup
Whole Raisins - 1/2 cup
Coconut Chips - 1/2 cup
Curry leaves - 1/2 cup
Spices Mix:
Tumeric powder - 2 tablespoons
Salt to taste
Sugar - 4 tablespoons or to taste
Red Chilli Powder - 2 tablespoons or to taste
Instructions/Method:
1. Preheat oven to 250 F. Place all the three kinds of cereal in a large baking bowl and bake for about 30 minutes until they are crisped toasted. Allow it to cool after.
2. In a bowl, mix all the Spices and keep it ready.
3. Take a pan or kadhai, add 1 cup oil and fry all the listed ingredients above (To Fry*) one by one and add to the Oven Roasted Cereals Mix. Please note that every time you fry one ingredient and mix it with the Oven Roasted Cereals Mix, add some of the Spices Mix with it as well.
Fry all the ingredients until they are light or golden brown: Whole Raw Skinned Peanuts, Cashews, Whole Raisins, and Coconut Chips. Curry Leaves need to be fried too in the same oil and should be done at the end. Add all the Spices Mix while you add the fried ingredients to the Oven Roasted Cereals Mix.
4. Now add the must-have ingredients listed above to the Oven Roasted Cereals mix and mix extremely well. The Chevdo wouldn't taste like Chevdo without these ingredients. It is a must to have these added along with the Spices Mix.
5. Cereal Chevdo is ready but let it cool off to room temperature before serving.
Notes:
- Store in an airtight container in a cool, dry place. The Chevdo will keep well for a month.

- You can always add a different combo of cereals to your choice.
- You can Air fry the ingredients listed (under 'To Fry') or use less oil to your preference or just roast all the ingredients in a pan to make it Oil-Free.
