Idli Sambar is one of my favorite South Indian dishes. My kids love Idlis and I usually make Instant Rava & Oats Idli or Quinoa & Oats Idli at least once a week. But often I do have a lot of leftover Idlis on days to which I love making Idli Sambar Chili Masala Fry which is super quick and easy to make and yet delicious and tastes great without Sambar & Chutney.
Ingredients:
Diced Idlis - 5 to 6 Idlis (Check out the recipe for Oats & Quinoa Idli)
Finely chopped onions - 1 tablespoon
Finely chopped tomatoes - 3 tablespoons
Curry Leaves - 3 to 4
Sambar Masala - 1 teaspoon or more to taste
Grated coconut - 1 teaspoon
Finely chopped Cilantro - 1 teaspoon
Oil - 1 tablespoon
Ginger - 1/2 teaspoon
Garlic - 1/2 teaspoon
Cumin seeds - 1/4 teaspoon
Mustard seeds - 1/2 teaspoon
Hing - pinch
Turmeric powder - 1/4 teaspoon
Salt to taste
Green Chillis paste or finely chopped - to taste
Coriander Powder - 1/2 teaspoon
For Garnishing:
Buttermilk Ranch
Method/Instructions:
- In a wide pan, heat oil on medium flame and add mustard seeds and Jeera and let it splutter and add hing and curry leaves and let it cook for 20 seconds.
- Add ginger, garlic, turmeric powder, coriander powder, grated coconut, green chillis, and let it cook for 1 to 2 minutes.
- Add Idlis and saute on a low flame until they start to turn light brown from all the sides.
- Add sambar powder and salt to taste and let it cook for a minute or two.
- Add cilantro and serve hot with Buttermilk Ranch. :)
