Surati Lapsi (Sweetened broken or cracked wheat)

Lapsi is also known as cracked or broken wheat in English which is more of a desert as it is super sweet, moist, and more like soft pudding oozing with a richness of the ghee. The recipe is very easy to follow and has all the nutritious goodness of ghee, cracked wheat, dry fruits, sugar, and cardamon powder.  Trust me the tempting flavors of the Lapsi will make you and your loved ones drool since the recipe taste exactly like how you would consume at Surati weddings in India.

Ingredients:

  • Chironji / charoli (Calumpang nuts) - 2 tablespoons
  • Almonds (Halves) - 1 tablespoon
  • Whole cardamom seeds - 1 tablespoon
  • Cashews (halves) - 2 tablespoon
  • Sugar - 1 1/2 cup
  • Cloves - 12
  • Cinnamon Stick - 3
  • Ghee - 1 cup
  • Lapsi (cracked wheat) - 1 1/2 cup
  • Water - 3 cups or as needed
  • Oil - 2 tablespoons
  • Kesar (Saffron) - 10 to 15 strands soaked in warm water or milk
Additional:
Kitchen towel or foil - 1
Blankets - 2

Method:
  1. In a pot, add oil and ghee. Once the ghee is melted add the Lapsi and stir well. Cook on low to medium flame for about 5 to 8 minutes until it starts to starts to cracks and goes aromatic.
  2. Add water and let it simmer on low flame with lid close. Cook until the Lapsi absorbs half the water.
  3. Now add Cinnamon stick and cloves and cook until the Lapsi absorbs all the water and is fully cooked.
  4. While the Lapsi is cooking on a slow flame, in a different pot, add sugar and 3 tablespoons of water. Let it simmer on low flame till the sugar melts and it turns into a syrup consistency. Keep it ready and aside.
  5. Once the Lapsi is fully cooked, add whole raisins, Chironji, Almonds, Cardamon seeds & Cashews. 
  6. Add the melted sugar syrup to the Lapsi. Taste the mixture at this point and add more sugar if needed. 
  7. Add Kesar and let it boil on a slow flame for about 5 minutes covered. 
  8. Wrap the lid of the pot with a kitchen towel or foil. Close the lid and wrap the blanket around the pot and leave it overnight inside the blanket or at least for 10 to 12 hours.
Notes:
  • Adding oil prevents the Lapsi to stick to the pot. 
  • + or - ghee quantity to your preference. If you want the Lapsi to taste exactly like the ones you have at the wedding, use the quantity listed. 
  • Best to make Lapsi a day before (preferably in the evening).
